Dry Ingredients:
- 1 1/2 cups gluten-free flour
- 1/4 cup brown sugar
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 tsp pumpkin spice
Wet Ingredients:
- 2 large eggs
- 2 tsp vanilla extract
- 3 large apples, peeled, cored, and diced
- 2 tbsp butter, melted
- 1/2 lemon, juiced
Instructions
- In a large bowl, whisk together the gluten-free flour, brown sugar, baking powder, salt, and pumpkin spice.
- In another bowl, beat the eggs with vanilla extract, melted butter, and lemon juice.
- Peel, core, and dice the apples into small chunks. Add them to the wet mixture and stir.
- Combine the wet and dry ingredients until a thick batter forms. Do not overmix.
- Preheat the air fryer to 370°F (188°C) and line the basket with parchment paper.
- Scoop spoonfuls of batter into the air fryer basket, spacing them slightly apart.
- Air fry for 8–10 minutes, flipping halfway through, until golden brown and cooked through.
- Remove and let cool slightly before serving. Optionally, dust with powdered sugar or drizzle with glaze.
Notes
- Use firm apples like Honeycrisp, Granny Smith, or Fuji for best texture.
- You can add chopped nuts or raisins for extra flavor.
- If the batter feels too thick, add 1–2 tbsp milk or apple cider.
