Description

Drumstick Ice Cream Cone Cookies are a fun, gluten-free treat that mimics the beloved ice cream drumstick in cookie form. With a crispy cone base, creamy chocolate dip, and crunchy topping, these cookies are a delightful bite-sized dessert that everyone can enjoy.


Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 12 gluten-free wafer cones
  • 1/2 cup semisweet chocolate chips
  • 1 tablespoon coconut oil (or vegetable oil)
  • 1/4 cup chopped nuts (such as peanuts or almonds), for topping
  • Sprinkles, for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the mini chocolate chips.
  6. Form dough into small balls (about 1 inch in diameter) and gently press each ball into the top of a wafer cone. Make sure the dough sticks to the cone securely.
  7. Place the cones on the prepared baking sheet and bake for 10-12 minutes, or until the cookie tops are lightly golden brown.
  8. Let the cookies cool completely on a wire rack.
  9. Once the cookies are cool, melt the semisweet chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
  10. Dip the top of each cookie cone into the melted chocolate, allowing any excess to drip off. Immediately sprinkle with chopped nuts or sprinkles.
  11. Let the chocolate set before serving, about 15 minutes. Enjoy!

Notes

  • For a dairy-free version, use dairy-free butter and chocolate chips.
  • If you don’t have mini chocolate chips, you can chop regular chocolate into small pieces.
  • Store the cookies in an airtight container at room temperature for up to 3 days.
