Drumstick Ice Cream Cone Cookies are a fun, gluten-free treat that mimics the beloved ice cream drumstick in cookie form. With a crispy cone base, creamy chocolate dip, and crunchy topping, these cookies are a delightful bite-sized dessert that everyone can enjoy.

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
- 12 gluten-free wafer cones
- 1/2 cup semisweet chocolate chips
- 1 tablespoon coconut oil (or vegetable oil)
- 1/4 cup chopped nuts (such as peanuts or almonds), for topping
- Sprinkles, for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
- In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the mini chocolate chips.
- Form dough into small balls (about 1 inch in diameter) and gently press each ball into the top of a wafer cone. Make sure the dough sticks to the cone securely.
- Place the cones on the prepared baking sheet and bake for 10-12 minutes, or until the cookie tops are lightly golden brown.
- Let the cookies cool completely on a wire rack.
- Once the cookies are cool, melt the semisweet chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
- Dip the top of each cookie cone into the melted chocolate, allowing any excess to drip off. Immediately sprinkle with chopped nuts or sprinkles.
- Let the chocolate set before serving, about 15 minutes. Enjoy!

- For a dairy-free version, use dairy-free butter and chocolate chips.
- If you don’t have mini chocolate chips, you can chop regular chocolate into small pieces.
- Store the cookies in an airtight container at room temperature for up to 3 days.
