- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh chives, chopped
- 3/4 cup buttermilk
- 1 large egg (for egg wash)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Stir in cheddar, Parmesan, and chives.
- Add buttermilk and mix just until the dough comes together. Do not overmix.
- Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 wedges.
- Place scones on the prepared baking sheet. Beat the egg and brush the tops for a golden finish.
- Bake for 18-20 minutes until golden brown. Cool slightly before serving.
Notes
- Use extra-sharp cheddar for the best flavor.
- You can freeze unbaked scones and bake from frozen, adding 2-3 minutes to the baking time.
- Serve warm with butter or a savory spread.
