Description

Flaky, buttery scones packed with sharp cheddar, creamy Parmesan, and fresh chives. Perfect served warm with butter or as a side for soups and salads.


Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh chives, chopped
  • 3/4 cup buttermilk
  • 1 large egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Stir in cheddar, Parmesan, and chives.
  5. Add buttermilk and mix just until the dough comes together. Do not overmix.
  6. Turn dough onto a floured surface, pat into a 1-inch thick circle, and cut into 8 wedges.
  7. Place scones on the prepared baking sheet. Beat the egg and brush the tops for a golden finish.
  8. Bake for 18-20 minutes until golden brown. Cool slightly before serving.

Notes

  • Use extra-sharp cheddar for the best flavor.
  • You can freeze unbaked scones and bake from frozen, adding 2-3 minutes to the baking time.
  • Serve warm with butter or a savory spread.
