A creamy, tangy pasta salad loaded with crunchy dill pickles, sharp cheddar, and fresh dill. This refreshing dish is perfect for picnics, potlucks, or an easy make-ahead lunch.

- 12 ounces rotini pasta
- 1 1/2 cups chopped dill pickles
- 1 cup cubed sharp cheddar cheese
- 1/4 cup finely sliced red onion
- 2 tablespoons chopped fresh dill
- 3/4 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons pickle juice
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Bring a large pot of salted water to a rolling boil.
- In a small bowl, whisk together mayonnaise, sour cream, pickle juice, salt, and black pepper until smooth.
- Add rotini to the boiling water and cook according to package instructions until al dente, about 8 to 10 minutes. Drain and rinse under cold water to cool completely.
- In a large mixing bowl, combine cooled pasta, chopped dill pickles, cheddar cubes, sliced red onion, and fresh dill.
- Pour the dressing over the pasta mixture and gently fold until evenly coated.
- Taste and adjust seasoning if needed. Chill in the refrigerator for at least 1 hour.
- Stir once more before serving and garnish with extra fresh dill if desired.

- Chill the salad for deeper flavor before serving.
- Add a splash of extra pickle juice before serving if it thickens in the fridge.
