- 12 oz fettuccine or pasta of choice
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cubed
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup dill pickles, chopped
- 1 tablespoon pickle juice
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon fresh dill (or 1 teaspoon dried)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then sauté until golden and cooked through, about 6–7 minutes. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds.
- Add chopped pickles and pickle juice, stirring for 1–2 minutes to release flavor.
- Pour in heavy cream, bring to a simmer, and let cook for 3–4 minutes to slightly thicken.
- Stir in Parmesan cheese until melted and smooth.
- Return chicken to the pan, add cooked pasta, and toss everything to coat.
- Sprinkle with fresh dill before serving.
