Description

Delicious Fresh Peach Fritters are golden, crispy treats filled with juicy peach chunks and coated in a sweet glaze. Perfect for a summer brunch or a comforting dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1 1/2 cups fresh peaches, peeled and diced
  • Vegetable oil, for frying
  • 1 cup powdered sugar
  • 23 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
  2. In another bowl, beat the eggs, milk, vanilla extract, and melted butter.
  3. Stir the wet ingredients into the dry ingredients until just combined. Fold in the diced peaches.
  4. Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C).
  5. Using a spoon or cookie scoop, drop spoonfuls of batter into the hot oil. Fry 2–3 minutes per side, or until golden brown and cooked through.
  6. Remove fritters with a slotted spoon and drain on paper towels.
  7. In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze.
  8. Drizzle or dip the warm fritters in the glaze and let set before serving.

Notes

  • Use ripe but firm peaches to avoid excess moisture in the batter.
  • For added flavor, sprinkle with a touch of nutmeg or lemon zest.
  • Best enjoyed fresh, but can be reheated in an oven at 300°F for a few minutes.
