- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 large eggs
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
- 1 1/2 cups fresh peaches, peeled and diced
- Vegetable oil, for frying
- 1 cup powdered sugar
- 2–3 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
- In another bowl, beat the eggs, milk, vanilla extract, and melted butter.
- Stir the wet ingredients into the dry ingredients until just combined. Fold in the diced peaches.
- Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C).
- Using a spoon or cookie scoop, drop spoonfuls of batter into the hot oil. Fry 2–3 minutes per side, or until golden brown and cooked through.
- Remove fritters with a slotted spoon and drain on paper towels.
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract to make the glaze.
- Drizzle or dip the warm fritters in the glaze and let set before serving.
Notes
- Use ripe but firm peaches to avoid excess moisture in the batter.
- For added flavor, sprinkle with a touch of nutmeg or lemon zest.
- Best enjoyed fresh, but can be reheated in an oven at 300°F for a few minutes.
