- Powdered sugar, for dusting (optional)
Instructions
- Heat oil in a deep fryer or deep saucepan to 350°F (175°C).
- In a bowl, whisk together pancake mix (or flour), milk, egg, sugar, and vanilla extract until smooth to create a thick batter.
- Skewer each marshmallow with a toothpick or small skewer.
- Dip marshmallows into the batter, coating them completely.
- Carefully place the battered marshmallows into the hot oil. Fry for 20–30 seconds, or until golden brown, turning as needed.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar and serve warm.

- Use frozen marshmallows for a firmer center after frying.
