Description

This dairy-free celery soup is creamy, comforting, and packed with fresh flavor. A perfect plant-based option for a light lunch or cozy dinner.


Ingredients

  • 8 stalks celery, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup unsweetened coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. Set a large pot over medium heat and let it warm for a minute.
  2. Add olive oil, then sauté the chopped onion, garlic, and celery for 8 to 10 minutes until softened but not browned.
  3. Pour in the broth and bring everything to a gentle boil. Then reduce heat and simmer for 15 minutes until the celery is very tender.
  4. Turn off the heat. Using an immersion blender, blend until smooth. If using a traditional blender, work in batches.
  5. Stir in the coconut milk. Add salt and pepper. Taste and adjust seasoning if needed.
  6. Ladle into bowls and garnish with fresh parsley or celery leaves. Serve hot.

Notes

  • Let the soup rest for 10 minutes off heat to deepen the flavor.
  • Add a splash of lemon juice before serving for brightness.
  • Freeze in individual portions for easy future meals.
