Description
Curry Goat Noodles is a bold, flavorful fusion dish combining tender, slow-cooked curried goat with stir-fried noodles. It brings together Caribbean spices and Asian-style noodles for a hearty, aromatic meal.

- 1.5 lbs goat meat (bone-in or boneless), cut into chunks
- 2 tablespoons curry powder (preferably Jamaican-style)
- 1 tablespoon all-purpose seasoning
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon black pepper
- Salt to taste
- 3 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 scallions, chopped
- 1 Scotch bonnet pepper, whole or sliced (optional for heat)
- 2–3 cups water or broth (as needed)
- 10 oz (280g) stir-fry noodles or egg noodles
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Fresh cilantro or scallions for garnish
Instructions
- Season the goat meat with curry powder, all-purpose seasoning, paprika, turmeric, black pepper, and salt. Let marinate for at least 1 hour or overnight.
- In a large pot, heat 2 tablespoons of oil over medium-high heat. Brown the goat meat on all sides.
- Add onion, garlic, ginger, scallions, and Scotch bonnet pepper. Sauté for 2–3 minutes.
- Add enough water or broth to cover the meat. Bring to a boil, then reduce heat and simmer covered for 1.5–2 hours, or until the meat is tender and the sauce has thickened slightly.
- While the goat is simmering, cook noodles according to package instructions. Drain and set aside.
- In a wok or large skillet, heat remaining 1 tablespoon oil. Add bell pepper and carrot and stir-fry for 2–3 minutes.
- Add cooked noodles, soy sauce, and oyster sauce. Toss well to combine.
- Add the tender curried goat (with a bit of sauce) to the noodles and stir to coat everything evenly. Let cook for 2 more minutes to blend flavors.
- Serve hot, garnished with chopped cilantro or scallions.
Notes
- Use a pressure cooker to reduce goat cooking time by half.
- Adjust heat level by omitting or including the Scotch bonnet pepper.
- You can substitute goat with lamb or beef if preferred.
