- 1 ½ cups dry lentils
- 1 pound sausage, sliced into coins
- 2 large carrots, chopped
- 2 ribs celery, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 bay leaves
- 6 cups chicken broth
- 1 tablespoon olive oil
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
Instructions
- Set your crockpot to the low setting while you prep the ingredients.
- Heat olive oil in a skillet and brown sausage slices until caramelized. Transfer to the crockpot.
- In the crockpot, add lentils, carrots, celery, onion, garlic, tomato paste, thyme, oregano, bay leaves, salt, and pepper.
- Pour chicken broth over the ingredients and stir everything together.
- Cover and cook on low for 7 to 8 hours or on high for 4 hours until lentils and vegetables are tender.
- Taste and adjust seasoning. Remove bay leaves. Optionally, add a splash of vinegar for brightness.
- Serve warm in bowls. Garnish with fresh parsley or grated parmesan if desired.
