Crockpot Ranch Chicken and Potatoes is an easy, comforting, and flavorful one-pot meal. Tender chicken thighs, baby potatoes, and carrots are slow-cooked in a creamy ranch sauce for a hearty dinner with minimal effort.

- 4 boneless, skinless chicken thighs or breasts
- 1 1/2 lbs baby potatoes, halved
- 2 cups baby carrots
- 1 (1 oz) packet ranch seasoning mix
- 1/2 cup chicken broth
- 1/2 cup sour cream
- 1/4 cup grated Parmesan cheese (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large bowl, mix ranch seasoning, sour cream, Parmesan (if using), olive oil, and chicken broth until smooth.
- Place potatoes and carrots in the bottom of the crockpot. Season with a little salt and pepper.
- Place chicken on top of the vegetables.
- Pour the ranch mixture evenly over the chicken and vegetables.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is cooked through and vegetables are tender.
- Garnish with chopped parsley before serving.
Notes
- For a creamier sauce, stir in a few tablespoons of cream cheese in the last hour of cooking.
- You can substitute chicken thighs with boneless breasts, but adjust cook time to prevent drying out.
- Add green beans or peas in the last 30 minutes for more veggies.
- This dish pairs well with crusty bread to soak up the sauce.
