Crockpot Meatloaf is a tender, flavorful version of the classic comfort food made easy in a slow cooker. This method keeps the meat moist and infuses it with rich seasoning, perfect for a hands-off family dinner.

- 2 lbs ground beef (preferably 80/20)
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup (plus more for topping)
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- Optional: parsley for garnish
Instructions
- In a large bowl, combine ground beef, breadcrumbs, eggs, milk, chopped onion, garlic, ketchup, Worcestershire sauce, salt, pepper, thyme, and paprika. Mix until just combined—do not overmix.
- Form the mixture into a loaf shape and place it on a piece of parchment paper or foil (this helps with easy removal).
- Place the loaf in the crockpot. Spread a layer of ketchup on top.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the internal temperature reaches 160°F (71°C).
- Optional: Transfer to a baking sheet and broil for 3–5 minutes to caramelize the top.
- Let rest for 10 minutes before slicing. Garnish with chopped parsley if desired.
Notes
- Line the crockpot with foil or parchment for easier cleanup and to help lift the meatloaf out.
- Feel free to add chopped bell pepper or grated carrot for extra veggies.
- Use ground turkey for a lighter version.
