Tender, juicy chicken slow cooked with garlic, lemon, and oregano, tucked into soft pita bread with fresh vegetables and creamy tzatziki for a bright Mediterranean meal
Ingredients
Scale
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups plain Greek yogurt
- 1 cup cucumber, finely grated and squeezed dry
- 2 tablespoons fresh parsley, chopped
- 6 pita bread rounds
- 1 cup cherry tomatoes, halved
- 1/2 medium red onion, thinly sliced
Instructions
- Preheat Your Equipment: Plug in your slow cooker and lightly grease the insert if needed
- Combine Ingredients: Mix olive oil, lemon juice, garlic, oregano, salt, and black pepper. Coat chicken thighs evenly
- Prepare Your Cooking Vessel: Place seasoned chicken into the slow cooker in an even layer
- Assemble the Dish: Stir together Greek yogurt, grated cucumber, chopped parsley, and a squeeze of lemon juice to make tzatziki. Chill until ready. Slice cherry tomatoes and red onion
- Cook to Perfection: Cover and cook on low for 6 hours or high for 3 to 4 hours until chicken is tender
- Finishing Touches: Shred chicken directly in the slow cooker so it soaks up juices
- Serve and Enjoy: Warm pita bread, fill with shredded chicken, tzatziki, tomatoes, and red onion
Notes
- Pat grated cucumber dry to avoid watery tzatziki
- Do not overcook chicken to keep it juicy
- Warm pita before serving for soft texture
