Description

Crockpot Cheesy BBQ Monterey Chicken is a flavorful, easy-to-make dish featuring tender chicken breasts slow-cooked in smoky barbecue sauce, topped with crispy bacon, melted Monterey Jack cheese, and fresh green onions. It’s a family-friendly comfort food classic.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup barbecue sauce (your favorite brand)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 4 slices cooked bacon, crumbled
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, sliced
  • Salt and pepper, to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Place the seasoned chicken in the bottom of the crockpot and pour the barbecue sauce over the top, ensuring the chicken is coated.
  3. Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, until the chicken is cooked through and tender.
  4. About 15 minutes before serving, sprinkle the shredded cheese and crumbled bacon over the chicken. Cover and let cook until the cheese is melted.
  5. Top with sliced green onions and optional parsley. Serve warm with mashed potatoes, rice, or a side salad.

Notes

  • Use a smoky or spicy BBQ sauce for extra flavor depth.
  • You can substitute chicken thighs for a juicier result.
  • For a crispier bacon texture, add it just before serving rather than during the cheese melting step.
  • Leftovers are great in sandwiches or wraps the next day.
