Description
Crockpot Cheesy BBQ Monterey Chicken is a flavorful, easy-to-make dish featuring tender chicken breasts slow-cooked in smoky barbecue sauce, topped with crispy bacon, melted Monterey Jack cheese, and fresh green onions. It’s a family-friendly comfort food classic.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce (your favorite brand)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- 4 slices cooked bacon, crumbled
- 1 cup shredded Monterey Jack cheese
- 2 green onions, sliced
- Salt and pepper, to taste
- Optional: chopped parsley for garnish
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Place the seasoned chicken in the bottom of the crockpot and pour the barbecue sauce over the top, ensuring the chicken is coated.
- Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, until the chicken is cooked through and tender.
- About 15 minutes before serving, sprinkle the shredded cheese and crumbled bacon over the chicken. Cover and let cook until the cheese is melted.
- Top with sliced green onions and optional parsley. Serve warm with mashed potatoes, rice, or a side salad.
Notes
- Use a smoky or spicy BBQ sauce for extra flavor depth.
- You can substitute chicken thighs for a juicier result.
- For a crispier bacon texture, add it just before serving rather than during the cheese melting step.
- Leftovers are great in sandwiches or wraps the next day.
