Description

A rich and comforting slow cooker stew made with tender beef tips, hearty vegetables, and fluffy dumplings steamed right on top. This cozy one-pot meal is packed with deep savory flavor and satisfying texture in every bite.


Ingredients

  • 2 pounds beef stew meat, cut into chunks
  • 1/2 cup all purpose flour, divided
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 3 medium carrots, sliced
  • 3 medium russet potatoes, diced
  • 2 stalks celery, sliced
  • 1 cup pearl onions
  • 1 cup frozen peas
  • 2 tablespoons butter, melted
  • 3/4 cup milk
  • 2 teaspoons baking powder

Instructions

  1. Toss the beef stew meat with 1/4 cup flour, salt, black pepper, garlic powder, onion powder, and dried thyme until evenly coated.
  2. Add carrots, potatoes, celery, and pearl onions to the bottom of the slow cooker. Place the coated beef on top.
  3. Pour in beef broth and Worcestershire sauce. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender.
  4. Stir in frozen peas during the last 30 minutes of cooking.
  5. In a bowl, combine the remaining 1/4 cup flour with baking powder. Stir in melted butter and milk to form a soft dough.
  6. Drop spoonfuls of dumpling dough over the hot stew. Cover and cook on high for 30 minutes, until dumplings are cooked through and fluffy.
  7. Let the stew rest for 5 minutes before serving. Adjust seasoning if needed and serve warm.

Notes

  • Avoid lifting the lid while the dumplings are steaming so they rise properly.
  • For a thicker gravy, mix 1 tablespoon flour with 2 tablespoons water and stir in during the last 30 minutes.
  • This stew tastes even better the next day as the flavors continue to develop.
