Description

Crock Pot Lasagna is a comforting, hands-off version of the classic Italian dish. Layers of seasoned ground beef, ricotta, mozzarella, and lasagna noodles cook slowly in the crock pot, creating a rich and cheesy meal perfect for family dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 1 tablespoon chopped garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 x 600mL jars of tomato pasta sauce (about 40 oz total)
  • 16 oz ricotta cheese
  • 3 ½ cups shredded mozzarella cheese
  • ⅓ cup shredded parmesan cheese
  • 1 tablespoon Italian seasoning
  • 15 oz jar alfredo sauce
  • 1 lb uncooked regular lasagna noodles
  • Optional garnish: fresh chopped parsley

Instructions

  1. In a skillet over medium heat, cook ground beef, onion, garlic, salt, and pepper until the beef is browned and onion is tender. Drain excess fat.
  2. Add tomato pasta sauce to the cooked beef and stir to combine.
  3. In a separate bowl, mix ricotta cheese, 2 cups of shredded mozzarella, parmesan cheese, and Italian seasoning.
  4. Spray the crock pot with cooking spray or lightly grease.
  5. Spread a thin layer of the meat sauce on the bottom of the crock pot.
  6. Layer uncooked lasagna noodles over the sauce, breaking them to fit as needed.
  7. Spread a layer of the ricotta cheese mixture over the noodles, then drizzle some alfredo sauce.
  8. Repeat the layers until all ingredients are used, ending with meat sauce on top. Sprinkle remaining mozzarella cheese over the top.
  9. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until noodles are tender and cheese is melted.
  10. Garnish with fresh parsley before serving if desired.

Notes

  • Use uncooked noodles that fit in your crock pot; break them if necessary.
  • Do not remove the lid during cooking to ensure even cooking.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • For a richer flavor, mix some shredded mozzarella into the meat sauce layers.
