Ingredients
Scale
- 3 large Potatoes (boiled and mashed)
- 2 Green chilies (finely chopped)
- 1/4 cup Fresh coriander leaves (chopped)
- 1 tablespoon Ginger (grated)
- 1 teaspoon Cumin seeds
- 1/2 teaspoon Garam masala
- 1/2 teaspoon Red chili powder
- Salt to taste
- 10–12 Spring roll wrappers or samosa sheets
- 2 tablespoons All-purpose flour
- Water as needed (to make paste)
- Oil for deep frying
Instructions
- Heat oil in a deep pan over medium heat for frying.
- In a mixing bowl, mash the boiled potatoes. Add chopped green chilies, coriander, ginger, cumin seeds, garam masala, red chili powder, and salt. Mix well.
- In a small bowl, mix flour and water to form a thick sealing paste.
- Lay out a wrapper, place a spoonful of filling on one end, and start rolling. Fold in the sides and roll tightly, sealing the end with flour paste.
- Fry the rolls in hot oil until golden brown and crispy on all sides.
- Remove and drain on paper towels. Serve hot with chutney or sauce of choice.
Notes
- Cool the filling before rolling to avoid soggy wrappers.
- Don’t overcrowd the pan while frying to maintain oil temperature.
- For extra crispiness, double-fry the samosas or reheat in an oven.
- You can freeze uncooked rolls and fry them later directly from frozen.
