Description

Ingredients

  • Tortilla wrap: 1 large
  • Boiled potato: 1 medium-sized, peeled and mashed
  • Eggs: 2 large
  • Salt: 1/4 teaspoon
  • Black pepper: 1/8 teaspoon
  • Red chili flakes: A pinch (optional)
  • Butter or oil: 1 tablespoon
  • Fresh herbs (like cilantro or parsley): 1 tablespoon, chopped
  • Grated cheese: 2 tablespoons (optional)

Instructions

  1. Preheat Your Equipment: Place your non-stick skillet on medium heat and let it warm for about 2 minutes.
  2. Combine Ingredients: In a bowl, mash the boiled potato with salt, pepper, and chili flakes. Mix in herbs and cheese if using.
  3. Prepare Your Cooking Vessel: Add a bit of butter or oil to the skillet and spread evenly. Pour in the beaten eggs and let them cook until just set.
  4. Assemble the Dish: Add the mashed potato mixture to the center of the eggs. Lay the tortilla over the mixture while still in the pan and press gently.
