Description

A bold and flavorful bowl featuring crispy peri-peri chicken, fluffy rice, and a vibrant mix of fresh vegetables, all topped with a cooling yogurt sauce.


Ingredients

  • 1 lb raw chicken thighs, boneless and skinless
  • 2 cups cooked white rice
  • 2 red chili peppers, finely chopped
  • 1 small red onion, sliced thin
  • 3 garlic cloves, minced
  • 1 cup purple cabbage, shredded
  • 1 cup canned corn, drained
  • 2 fresh tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup plain yogurt
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat and drizzle in olive oil.
  2. In a bowl, mix chicken with chopped red chili, garlic, smoked paprika, salt, pepper, and lemon juice. Toss to coat.
  3. Once skillet is hot, add chicken and cook for 6 to 8 minutes per side until crispy and cooked through.
  4. In serving bowls, layer warm rice, crispy chicken, cabbage, corn, tomatoes, and red onion.
  5. Let the chicken rest, then slice it.
  6. Mix yogurt with lemon juice, salt, and cilantro. Drizzle over bowls.
  7. Garnish with extra cilantro and lemon if desired. Serve warm.

  • Use a cast iron pan for the best crispy texture.
  • Chop veggies small for better bite balance.
  • Make the sauce ahead to deepen the flavors.
