- 1 lb raw chicken thighs, boneless and skinless
- 2 cups cooked white rice
- 2 red chili peppers, finely chopped
- 1 small red onion, sliced thin
- 3 garlic cloves, minced
- 1 cup purple cabbage, shredded
- 1 cup canned corn, drained
- 2 fresh tomatoes, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup plain yogurt
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat and drizzle in olive oil.
- In a bowl, mix chicken with chopped red chili, garlic, smoked paprika, salt, pepper, and lemon juice. Toss to coat.
- Once skillet is hot, add chicken and cook for 6 to 8 minutes per side until crispy and cooked through.
- In serving bowls, layer warm rice, crispy chicken, cabbage, corn, tomatoes, and red onion.
- Let the chicken rest, then slice it.
- Mix yogurt with lemon juice, salt, and cilantro. Drizzle over bowls.
- Garnish with extra cilantro and lemon if desired. Serve warm.

- Use a cast iron pan for the best crispy texture.
- Chop veggies small for better bite balance.
