- 2 pounds Yukon Gold Potatoes, sliced into thick rounds
- 3 tablespoons Olive Oil
- ¾ cup Grated Parmesan Cheese
- 1 teaspoon Garlic Powder
- ½ teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 2 tablespoons Fresh Parsley, chopped
Instructions
- Preheat your oven to 425°F and line a large baking sheet with parchment paper.
- In a large bowl, toss the sliced potatoes with olive oil, garlic powder, paprika, salt, and pepper until well coated.
- Arrange the potatoes in a single layer on the baking sheet, cut side down, pressing them gently so they lay flat.
- Sprinkle the grated parmesan evenly over the tops of the potatoes.
- Roast for 25 to 30 minutes, until the bottoms are golden and crispy and the parmesan is browned.
- Let them cool slightly before loosening with a spatula and garnish with fresh parsley.
- Serve warm and enjoy!
