Description

Ingredients

  • 2 large yellow onions, sliced into 1/4-inch rings
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup cold sparkling water
  • 4 cups vegetable oil for frying

Instructions

  1. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  2. In a bowl, mix flour, cornstarch, baking powder, salt, black pepper, and garlic powder. In another bowl, whisk in cold sparkling water to form a smooth batter.
  3. Line a wire rack over a baking sheet to prepare for draining the fried rings.
  4. Dip each onion ring into the dry flour mixture, then into the wet batter, letting excess drip off.
  5. Carefully place onion rings into hot oil in small batches. Fry for 2 to 3 minutes per side until golden and crispy.
  6. Remove with a slotted spoon and place on the wire rack. Sprinkle with a pinch of salt while still hot.
  7. Serve immediately with your favorite dipping sauce.
