- 2 large Eggs
- 1 large Russet Potato, peeled and grated

Instructions
- Heat a skillet over medium heat and add butter.
- In a bowl, mix grated potatoes with salt and pepper, pat dry.
- Form a patty with the potato mixture and cook in skillet until crispy on both sides, then set aside.
- Toast brioche slices in skillet with butter until golden.
- Cook eggs to your preference.
- Layer cheese, eggs, hash browns, and greens between slices of brioche.
- Press sandwich gently and cook until cheese melts and bread is golden.
- Let rest, slice, and serve hot.
