- 2 boneless chicken breasts, pounded to ½ inch thickness
- 2 cups romaine lettuce, chopped
- 2 ciabatta rolls, halved and toasted
- 1/4 cup grated parmesan cheese
- 1/2 cup Caesar dressing
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- Olive oil, for frying
Instructions
- Heat a large skillet with 1/2 inch of olive oil over medium heat. Set a wire rack over a tray for draining.
- In three separate bowls, prepare the flour with garlic powder and paprika, beaten eggs, and panko breadcrumbs with a pinch of salt.
- Once oil is shimmering, it’s ready to fry. Do not overcrowd the pan.
- Dredge each chicken breast in flour, then egg, then breadcrumbs, pressing firmly for full coverage.
- Fry chicken 3–4 minutes per side until golden and cooked through. Let rest 5 minutes on the wire rack.
- Toast ciabatta rolls. Layer romaine lettuce, Caesar dressing, crispy chicken, and a sprinkle of parmesan.
- Slice the sandwich and serve immediately while hot and crisp.
Notes
- For added crunch, double dip chicken in egg and breadcrumbs.
- Dry romaine thoroughly to avoid sogginess.
- Use a wire rack instead of paper towels to keep the crust crispy.
