- 6 cups mixed salad greens
- 2 medium apples (Honeycrisp or Gala), thinly sliced
- 1 cup pecans, toasted and roughly chopped
- 1/2 cup dried cranberries
- 1/4 small red onion, thinly sliced
- 1/2 cup goat cheese or feta, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Toast pecans in a dry skillet over medium heat for 4–5 minutes, stirring occasionally, until fragrant. Set aside to cool.
- In a small jar or bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
- Place salad greens in a large mixing bowl.
- Add apple slices, toasted pecans, dried cranberries, red onion, and crumbled cheese to the greens.
- Drizzle vinaigrette over the top and toss gently to coat.
- Taste and adjust seasoning if needed.
- Serve immediately and enjoy the crisp freshness.
