- 12 ounces fettuccine or penne
- 1 cup cherry tomatoes, halved
- 2 tablespoons tomato paste
- 1 cup heavy cream
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- A handful of fresh basil, chopped
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente, reserve 1/2 cup pasta water, then drain.
- Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Stir in tomato paste and cook for 1 minute to enhance flavor.
- Add cherry tomatoes and cook for 5-7 minutes until they begin to soften and burst.
- Pour in heavy cream and stir until smooth. Simmer for 2-3 minutes. Season with salt and pepper.
- Add the cooked pasta to the sauce. Toss to coat, adding pasta water as needed to loosen the sauce.
- Stir in fresh basil just before serving and enjoy warm.
