Description

Creamy Tomato Pasta is a rich and comforting dish where tender pasta is coated in a luscious tomato cream sauce, brightened with cherry tomatoes and fresh basil. It’s quick, flavorful, and perfect for any night of the week.


Ingredients

  • 12 ounces fettuccine or penne
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • A handful of fresh basil, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente, reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  3. Stir in tomato paste and cook for 1 minute to enhance flavor.
  4. Add cherry tomatoes and cook for 5-7 minutes until they begin to soften and burst.
  5. Pour in heavy cream and stir until smooth. Simmer for 2-3 minutes. Season with salt and pepper.
  6. Add the cooked pasta to the sauce. Toss to coat, adding pasta water as needed to loosen the sauce.
  7. Stir in fresh basil just before serving and enjoy warm.

Notes

  • Use gluten-free pasta for a GF option.
  • Add red pepper flakes for a touch of heat.
  • Roast cherry tomatoes beforehand for deeper flavor.
  • Store leftovers in the fridge for up to 3 days.
