- 8 oz spaghetti or linguine
- 1 tablespoon olive oil
- 1/2 lb smoked sausage or spicy Italian sausage, sliced
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 tablespoons chopped parsley (optional)
Instructions
- Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage slices and cook until browned on both sides, about 5–6 minutes. Remove and set aside.
- In the same skillet, add garlic and red pepper flakes. Sauté for 1–2 minutes until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Return sausage to the skillet, then add cooked pasta. Toss to combine, adding reserved pasta water a little at a time if needed to loosen the sauce.
- Season with salt and pepper to taste. Garnish with parsley if desired and serve immediately.

- Use chicken sausage or plant-based sausage for a lighter or vegetarian version.
- Adjust spice level by increasing or reducing the red pepper flakes.
