- 1 pound ground chicken
- 3 garlic cloves, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 3/4 cup chicken broth
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Heat a large skillet over medium heat and add 1 tablespoon olive oil.
- In a bowl, mix ground chicken, half the garlic, 1/4 cup parmesan, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Form into meatballs.
- Sear the meatballs in batches in the skillet until browned on all sides, then set aside.
- In the same skillet, add remaining olive oil and garlic. Sauté for 30 seconds.
- Stir in chopped sun-dried tomatoes, red pepper flakes, and remaining Italian seasoning.
- Add chicken broth and heavy cream. Bring to a simmer, then stir in the remaining parmesan.
- Return meatballs to the skillet and simmer for 10–15 minutes, until sauce thickens and meatballs are cooked through.
- Adjust seasoning, garnish with chopped parsley, and serve hot.
