Ingredients

  • 1 pound ground chicken
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 3/4 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon olive oil.
  2. In a bowl, mix ground chicken, half the garlic, 1/4 cup parmesan, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Form into meatballs.
  3. Sear the meatballs in batches in the skillet until browned on all sides, then set aside.
  4. In the same skillet, add remaining olive oil and garlic. Sauté for 30 seconds.
  5. Stir in chopped sun-dried tomatoes, red pepper flakes, and remaining Italian seasoning.
  6. Add chicken broth and heavy cream. Bring to a simmer, then stir in the remaining parmesan.
  7. Return meatballs to the skillet and simmer for 10–15 minutes, until sauce thickens and meatballs are cooked through.
  8. Adjust seasoning, garnish with chopped parsley, and serve hot.

  • Use a scoop to make evenly sized meatballs for even cooking.
  • Don’t overmix the meat mixture to keep the texture tender.
  • Let the sauce simmer slowly for richer flavor and perfect thickness.
  • Reheat gently with a splash of cream or broth to revive the sauce.
