Description
A classic no-bake Italian dessert made with espresso-soaked ladyfingers layered with creamy mascarpone and finished with a rich cocoa topping.
Ingredients
- Ladyfinger biscuits, 200 g
- Freshly brewed espresso, 240 ml, cooled
- Mascarpone cheese, 450 g
- Granulated sugar, 120 g
- Large eggs, 4, separated
- Unsweetened cocoa powder, 2 tablespoons
Instructions
- Separate the egg yolks and whites into two bowls.
- Whisk the egg yolks with the granulated sugar until pale and creamy.
- Add the mascarpone cheese to the yolk mixture and mix until smooth.
- In a clean bowl, whisk the egg whites until soft peaks form.
- Gently fold the egg whites into the mascarpone mixture until fully combined.
- Pour the cooled espresso into a shallow dish.
- Quickly dip each ladyfinger into the espresso and arrange them in a single layer in a rectangular dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
- Add a second layer of espresso-dipped ladyfingers.
- Spread the remaining mascarpone mixture on top and smooth the surface.
- Cover and refrigerate for at least 4 hours to set.
- Dust generously with cocoa powder just before serving.
