Description

A classic no-bake Italian dessert made with espresso-soaked ladyfingers layered with creamy mascarpone and finished with a rich cocoa topping.


Ingredients

  • Ladyfinger biscuits, 200 g
  • Freshly brewed espresso, 240 ml, cooled
  • Mascarpone cheese, 450 g
  • Granulated sugar, 120 g
  • Large eggs, 4, separated
  • Unsweetened cocoa powder, 2 tablespoons

Instructions

  1. Separate the egg yolks and whites into two bowls.
  2. Whisk the egg yolks with the granulated sugar until pale and creamy.
  3. Add the mascarpone cheese to the yolk mixture and mix until smooth.
  4. In a clean bowl, whisk the egg whites until soft peaks form.
  5. Gently fold the egg whites into the mascarpone mixture until fully combined.
  6. Pour the cooled espresso into a shallow dish.
  7. Quickly dip each ladyfinger into the espresso and arrange them in a single layer in a rectangular dish.
  8. Spread half of the mascarpone mixture evenly over the ladyfingers.
  9. Add a second layer of espresso-dipped ladyfingers.
  10. Spread the remaining mascarpone mixture on top and smooth the surface.
  11. Cover and refrigerate for at least 4 hours to set.
  12. Dust generously with cocoa powder just before serving.
