- 4 medium boneless skinless chicken breasts
- 1 1/2 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 5 garlic cloves, minced
- 1 cup low sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon kosher salt, or to taste
- 1/2 teaspoon black pepper, or to taste
Instructions
- Preheat a large skillet over medium high heat and add olive oil.
- Season chicken on both sides with salt, pepper, and Italian seasoning.
- Sear chicken 4 to 5 minutes per side until golden, then transfer to a plate.
- Add butter to the same skillet, stir in minced garlic, and cook 30 to 60 seconds until fragrant.
- Whisk in chicken broth, heavy cream, and Parmesan until smooth.
- Add halved potatoes, stir to coat, and bring to a gentle simmer.
- Return chicken to the skillet among the potatoes and cover.
- Simmer 25 to 30 minutes, stirring once or twice, until potatoes are fork tender and chicken reaches 165°F.
- Uncover and simmer 3 to 5 minutes if you want a thicker sauce.
- Stir in chopped parsley, taste, and adjust salt and pepper.
- Serve chicken and potatoes with plenty of creamy sauce spooned over the top.
Notes
- Note: For extra richness, add 2 tablespoons cream cheese to the sauce and whisk until melted.
- Slice larger potatoes smaller so everything cooks evenly.
- If the sauce gets too thick, loosen with a splash of warm broth.
- Garnish with extra Parmesan shavings and parsley for a restaurant finish.
