Description

Tender seared chicken and buttery potatoes simmered in a silky garlic Parmesan cream sauce. Cozy, comforting, and weeknight-easy.


Ingredients

  • 4 medium boneless skinless chicken breasts
  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 garlic cloves, minced
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon black pepper, or to taste

Instructions

  1. Preheat a large skillet over medium high heat and add olive oil.
  2. Season chicken on both sides with salt, pepper, and Italian seasoning.
  3. Sear chicken 4 to 5 minutes per side until golden, then transfer to a plate.
  4. Add butter to the same skillet, stir in minced garlic, and cook 30 to 60 seconds until fragrant.
  5. Whisk in chicken broth, heavy cream, and Parmesan until smooth.
  6. Add halved potatoes, stir to coat, and bring to a gentle simmer.
  7. Return chicken to the skillet among the potatoes and cover.
  8. Simmer 25 to 30 minutes, stirring once or twice, until potatoes are fork tender and chicken reaches 165°F.
  9. Uncover and simmer 3 to 5 minutes if you want a thicker sauce.
  10. Stir in chopped parsley, taste, and adjust salt and pepper.
  11. Serve chicken and potatoes with plenty of creamy sauce spooned over the top.

Notes

  • Note: For extra richness, add 2 tablespoons cream cheese to the sauce and whisk until melted.
  • Slice larger potatoes smaller so everything cooks evenly.
  • If the sauce gets too thick, loosen with a splash of warm broth.
  • Garnish with extra Parmesan shavings and parsley for a restaurant finish.
