- 1 cup orzo pasta
- 2 salmon fillets (about 170 grams each)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1 whole lemon
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your pan over medium heat and prepare a skillet for the orzo.
- Season the salmon fillets with salt and black pepper.
- Add olive oil to a non-stick pan and cook the salmon skin side down for 4 to 5 minutes per side until golden and cooked through, then set aside.
- In a skillet, melt butter and add minced garlic, cooking until fragrant.
- Stir in the orzo and toast lightly for 1 minute.
- Add water or broth and cook the orzo while stirring until tender.
- Pour in the heavy cream and add parmesan cheese, stirring until the sauce becomes creamy.
- Squeeze fresh lemon juice into the mixture and stir in chopped parsley.
- Place the cooked salmon on top of the creamy orzo.
- Serve warm and enjoy.
