- 4 raw chicken cutlets
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella
- 3 garlic cloves, minced
- 2 tbsp chopped fresh parsley
- 1 tsp dried Italian seasoning
- 1 ½ cups breadcrumbs
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
- In a bowl, mix cream cheese, mozzarella, garlic, parsley, Italian seasoning, salt, and pepper until smooth.
- In a separate shallow bowl, toss breadcrumbs with olive oil.
- Lay chicken cutlets flat and spread the cheese mixture in the center of each. Roll up and secure with toothpicks or twine.
- Press each roll into breadcrumbs to coat evenly.
- Arrange in the baking dish and bake for 30–35 minutes until golden and cooked through (internal temp 165°F).
- Let rest for 5 minutes before serving. Slice and enjoy!
Notes
- Chill the filling before stuffing for easier rolling.
- Use gluten-free breadcrumbs if needed.
- Double the filling and freeze for a quick meal next time.
