Description

Tender salmon fillets seared to a golden crust and nestled in a silky garlic butter cream sauce with a bright kiss of lemon and herbs.

Ingredients

  • Salmon fillets, 4 fillets (about 6 oz each)
  • Olive oil, 1 tablespoon
  • Butter, 3 tablespoons
  • Garlic cloves, 4 cloves minced
  • Heavy cream, 1 cup
  • Chicken broth, 1/2 cup
  • Parmesan cheese, 1/4 cup grated
  • Fresh parsley, 2 tablespoons chopped
  • Salt and black pepper, to taste
  • Lemon juice, 1 tablespoon

Instructions

  1. Pat the salmon dry, then season both sides with salt and black pepper.
  2. Heat a large skillet over medium high heat and add olive oil.
  3. Sear salmon for 4 to 5 minutes per side until deeply golden and just cooked through, then transfer to a warm plate.
  4. Reduce heat to medium, add butter to the same skillet, and sauté minced garlic for 30 to 45 seconds until fragrant.
  5. Stir in chicken broth and heavy cream, then simmer for 2 to 3 minutes until slightly thickened.
  6. Whisk in grated Parmesan until melted and smooth, then return salmon to the skillet and spoon sauce over the fillets.
  7. Finish with lemon juice and chopped parsley, simmer 30 seconds, then serve immediately with extra sauce.

Notes

  • Note: Rest the salmon for 2 minutes before saucing to keep it juicy.
  • If the sauce is thin, simmer uncovered for 1 to 2 minutes until it coats a spoon.
  • A pinch of red pepper flakes adds gentle heat without overpowering the garlic.
  • Do not boil the cream on high heat to prevent curdling.
  • For pescatarian broth, swap chicken broth for vegetable broth.
