Ingredients
- Salmon fillets, 4 fillets (about 6 oz each)
- Olive oil, 1 tablespoon
- Butter, 3 tablespoons
- Garlic cloves, 4 cloves minced
- Heavy cream, 1 cup
- Chicken broth, 1/2 cup
- Parmesan cheese, 1/4 cup grated
- Fresh parsley, 2 tablespoons chopped
- Salt and black pepper, to taste
- Lemon juice, 1 tablespoon
Instructions
- Pat the salmon dry, then season both sides with salt and black pepper.
- Heat a large skillet over medium high heat and add olive oil.
- Sear salmon for 4 to 5 minutes per side until deeply golden and just cooked through, then transfer to a warm plate.
- Reduce heat to medium, add butter to the same skillet, and sauté minced garlic for 30 to 45 seconds until fragrant.
- Stir in chicken broth and heavy cream, then simmer for 2 to 3 minutes until slightly thickened.
- Whisk in grated Parmesan until melted and smooth, then return salmon to the skillet and spoon sauce over the fillets.
- Finish with lemon juice and chopped parsley, simmer 30 seconds, then serve immediately with extra sauce.
Notes
- Note: Rest the salmon for 2 minutes before saucing to keep it juicy.
- If the sauce is thin, simmer uncovered for 1 to 2 minutes until it coats a spoon.
- A pinch of red pepper flakes adds gentle heat without overpowering the garlic.
- Do not boil the cream on high heat to prevent curdling.
- For pescatarian broth, swap chicken broth for vegetable broth.
