Creamy garlic butter chicken with spinach is a rich, comforting one-skillet meal featuring tender chicken thighs simmered in a velvety garlic-infused sauce with fresh spinach and optional parmesan. Quick enough for weeknights, yet impressive enough for guests.

- 4 boneless, skinless chicken thighs (about 1.5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 5 garlic cloves, minced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 cups fresh spinach (lightly packed)
- 1/4 cup grated parmesan cheese (optional)
- 1 tablespoon chopped parsley (optional, for garnish)
Instructions
- Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter.
- Season chicken thighs with salt and pepper. Sear in the skillet for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
- Lower heat to medium and add the remaining butter. Stir in the minced garlic and sauté for about 1 minute until fragrant.
- Deglaze the pan with chicken broth, scraping up brown bits. Stir in the heavy cream and simmer for 3–4 minutes to thicken slightly.
- Add the spinach and stir until wilted. Return chicken to the pan and spoon sauce over the top. Simmer for another 2 minutes.
- Sprinkle with parmesan and parsley if using. Serve hot over pasta, rice, or mashed potatoes.
Notes
- Let the chicken rest a minute or two before serving for maximum juiciness.
- Use fresh garlic for best flavor—jarred garlic doesn’t give the same kick.
- Customize by adding mushrooms, chili flakes, or other favorite vegetables.
