- 6 boneless skinless chicken thighs (about 1.5 pounds)
- 3 cups fresh spinach leaves, loosely packed
- 4 garlic cloves, minced
- 3 tablespoons unsalted butter
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon Italian seasoning
Instructions
- Heat a large skillet over medium heat and add olive oil. Allow it to warm for about 1 minute.
- Season the chicken thighs evenly on both sides with salt, black pepper, and Italian seasoning.
- Add the chicken to the hot skillet and cook for 5 to 6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add butter and minced garlic. Cook for about 1 minute until fragrant.
- Pour in the heavy cream and stir gently. Let it simmer for 3 to 4 minutes.
- Stir in the grated parmesan cheese and allow the sauce to thicken slightly.
- Add the fresh spinach and cook until wilted.
- Return the chicken to the skillet, spoon the sauce over the top, and simmer for another 3 to 5 minutes.
- Remove from heat and serve warm with extra sauce spooned over each portion.

- Let the chicken rest briefly before serving to retain juices.
- Use freshly grated parmesan for smoother melting and better flavor.
- Keep the sauce at a gentle simmer to prevent curdling.
- Add a squeeze of lemon juice at the end for extra brightness if desired.
