Description

Juicy chicken thighs simmered in a rich garlic butter cream sauce with tender spinach and parmesan, all made in one skillet for a comforting and satisfying dinner.


Ingredients

  • 6 boneless skinless chicken thighs (about 1.5 pounds)
  • 3 cups fresh spinach leaves, loosely packed
  • 4 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat a large skillet over medium heat and add olive oil. Allow it to warm for about 1 minute.
  2. Season the chicken thighs evenly on both sides with salt, black pepper, and Italian seasoning.
  3. Add the chicken to the hot skillet and cook for 5 to 6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add butter and minced garlic. Cook for about 1 minute until fragrant.
  5. Pour in the heavy cream and stir gently. Let it simmer for 3 to 4 minutes.
  6. Stir in the grated parmesan cheese and allow the sauce to thicken slightly.
  7. Add the fresh spinach and cook until wilted.
  8. Return the chicken to the skillet, spoon the sauce over the top, and simmer for another 3 to 5 minutes.
  9. Remove from heat and serve warm with extra sauce spooned over each portion.
