- 2 cups whole milk
- 4 large eggs
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- A pinch of ground cinnamon (optional, for topping)
Instructions
- Preheat your oven to 325°F (160°C) and place a roasting pan inside. Begin boiling water for the water bath.
- In a saucepan, heat the milk until it’s just steaming. In a separate bowl, whisk together the eggs and sugar.
- Slowly pour the warm milk into the egg mixture while whisking continuously. Stir in the vanilla extract.
- Strain the custard mixture through a fine mesh sieve for smooth texture.
- Place ramekins into the roasting pan and divide the custard evenly among them.
- Carefully pour the hot water into the roasting pan to come halfway up the sides of the ramekins.
- Bake for 35–40 minutes until the edges are set and the center still jiggles slightly.
- Remove from the water bath and let cool to room temperature. Chill if desired and dust with cinnamon before serving.

- Let cool completely before refrigerating to avoid condensation.
