Description

A silky, smooth, and comforting creamy custard dessert made with just a few pantry staples. Perfectly sweet, lightly spiced, and ideal for serving warm or chilled.

Ingredients

Scale
  • 2 cups whole milk
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • A pinch of ground cinnamon (optional, for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and place a roasting pan inside. Begin boiling water for the water bath.
  2. In a saucepan, heat the milk until it’s just steaming. In a separate bowl, whisk together the eggs and sugar.
  3. Slowly pour the warm milk into the egg mixture while whisking continuously. Stir in the vanilla extract.
  4. Strain the custard mixture through a fine mesh sieve for smooth texture.
  5. Place ramekins into the roasting pan and divide the custard evenly among them.
  6. Carefully pour the hot water into the roasting pan to come halfway up the sides of the ramekins.
  7. Bake for 35–40 minutes until the edges are set and the center still jiggles slightly.
  8. Remove from the water bath and let cool to room temperature. Chill if desired and dust with cinnamon before serving.

Notes

  • Straining the custard ensures a silky final texture.
  • Do not skip the water bath—it’s essential for even cooking.
  • Let cool completely before refrigerating to avoid condensation.
