Description

A decadent coffee- and rum-spiked dessert layered with mascarpone, pistachio cream, and ladyfinger biscotti, topped with roasted pistachios for a creamy, nutty treat.

  • 2 tablespoons (30 ml) aged rum
  • 3/4 teaspoon almond extract, divided
  • 4 large eggs
  • 66 g granulated sugar (2 1/3 ounces; about 1/3 cup)
  • 1/4 teaspoon Diamond Crystal kosher salt (or half for table salt)
  • 454 g mascarpone cheese (16 ounces; about 2 cups), chilled
  • 156 g pistachio cream spread, such as Pistacchiosa (5 1/2 ounces; 1/2 cup)
  • 1 teaspoon vanilla extract
  • 200 g (7 ounces) ladyfinger biscotti, divided (about 24 cookies)
  • 32 g roasted unsalted pistachios (1 1/8 ounces; about 1/4 cup)

Instructions

  1. Brew 2 cups of strong coffee and let it cool slightly. Stir in 2 tablespoons aged rum and 1/2 teaspoon almond extract.
  2. In a mixing bowl, whisk together eggs, granulated sugar, remaining 1/4 teaspoon almond extract, and salt until pale and frothy.
  3. Add chilled mascarpone cheese, pistachio cream spread, and vanilla extract to the egg mixture. Gently fold until smooth and well combined.
  4. Briefly dip half of the ladyfinger biscotti into the coffee-rum mixture, ensuring they are soaked but not soggy.
  5. Arrange a layer of soaked biscotti in the bottom of a serving dish or individual cups.
  6. Spread half of the mascarpone-pistachio mixture over the biscotti layer.
  7. Repeat with the remaining dipped biscotti and mascarpone mixture.
  8. Top with roasted unsalted pistachios.
  9. Refrigerate for at least 4 hours or overnight to allow flavors to meld and dessert to set.
  10. Serve chilled and enjoy.

Notes

  • Use chilled mascarpone for the best texture and stability.
  • Aged rum enhances the depth of flavor, but can be adjusted or omitted for a milder taste.
