- 1 teaspoon vanilla extract
- 200 g (7 ounces) ladyfinger biscotti, divided (about 24 cookies)
- 32 g roasted unsalted pistachios (1 1/8 ounces; about 1/4 cup)
Instructions
- Brew 2 cups of strong coffee and let it cool slightly. Stir in 2 tablespoons aged rum and 1/2 teaspoon almond extract.
- In a mixing bowl, whisk together eggs, granulated sugar, remaining 1/4 teaspoon almond extract, and salt until pale and frothy.
- Add chilled mascarpone cheese, pistachio cream spread, and vanilla extract to the egg mixture. Gently fold until smooth and well combined.
- Briefly dip half of the ladyfinger biscotti into the coffee-rum mixture, ensuring they are soaked but not soggy.
- Arrange a layer of soaked biscotti in the bottom of a serving dish or individual cups.
- Spread half of the mascarpone-pistachio mixture over the biscotti layer.
- Repeat with the remaining dipped biscotti and mascarpone mixture.
- Top with roasted unsalted pistachios.
- Refrigerate for at least 4 hours or overnight to allow flavors to meld and dessert to set.
- Serve chilled and enjoy.

- Use chilled mascarpone for the best texture and stability.
- Aged rum enhances the depth of flavor, but can be adjusted or omitted for a milder taste.
