Description

This Creamy Chicken and Wild Rice Soup is a comforting and hearty dish with tender chicken, wholesome wild rice, and a creamy, flavorful broth. Packed with vegetables and herbs, it’s perfect for cozy lunches or dinners.


Ingredients

  • 2 large chicken breasts
  • 32 oz chicken broth
  • 1 (4.3 oz) box Rice-A-Roni wild rice
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 onion, chopped
  • 1 cup heavy cream or milk
  • 1 clove garlic, minced
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, celery, and carrots and sauté until softened, about 5 minutes.
  2. Add minced garlic, basil, and oregano, cooking for an additional 1 minute until fragrant.
  3. Add chicken breasts to the pot along with chicken broth. Bring to a simmer and cook until chicken is cooked through, about 15-20 minutes.
  4. Remove chicken breasts from the pot, shred them with two forks, and return to the pot.
  5. Add Rice-A-Roni wild rice mix and cook according to package instructions, typically 15 minutes, until rice is tender.
  6. Stir in heavy cream or milk and heat through without boiling.
  7. Adjust seasoning with salt and pepper to taste.
  8. Serve hot, optionally garnished with fresh parsley or additional herbs.

  • Use heavy cream for a richer soup or milk for a lighter version.
  • Leftovers store well in the refrigerator for up to 3 days.
  • You can substitute pre-cooked rotisserie chicken for convenience.
