- 2 large chicken breasts
- 32 oz chicken broth
- 1 (4.3 oz) box Rice-A-Roni wild rice
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 onion, chopped
- 1 cup heavy cream or milk
- 1 clove garlic, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, celery, and carrots and sauté until softened, about 5 minutes.
- Add minced garlic, basil, and oregano, cooking for an additional 1 minute until fragrant.
- Add chicken breasts to the pot along with chicken broth. Bring to a simmer and cook until chicken is cooked through, about 15-20 minutes.
- Remove chicken breasts from the pot, shred them with two forks, and return to the pot.
- Add Rice-A-Roni wild rice mix and cook according to package instructions, typically 15 minutes, until rice is tender.
- Stir in heavy cream or milk and heat through without boiling.
- Adjust seasoning with salt and pepper to taste.
- Serve hot, optionally garnished with fresh parsley or additional herbs.

- Use heavy cream for a richer soup or milk for a lighter version.
- Leftovers store well in the refrigerator for up to 3 days.
- You can substitute pre-cooked rotisserie chicken for convenience.
