- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 1/2 cup long-grain white rice
- 1 cup milk or heavy cream
- Salt and pepper to taste
- 1 teaspoon dried thyme
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, melt butter over medium heat.
- Add onion, garlic, carrots, and celery; sauté until vegetables are softened, about 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add rice and reduce heat to a simmer; cook until rice is tender, about 15 minutes.
- Stir in cooked chicken, milk or cream, thyme, salt, and pepper.
- Simmer for another 5–7 minutes until heated through and slightly thickened.
- Adjust seasoning as needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
- Use leftover cooked chicken or rotisserie chicken for convenience.
- For a thicker soup, add a tablespoon of flour or cornstarch slurry before adding milk.
- Freeze leftovers in airtight containers for up to 3 months.
