Description

A comforting and creamy chicken soup with tender orzo pasta, fresh vegetables, and a burst of fresh dill for a bright, herby finish.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup uncooked orzo pasta
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until softened.
  2. Stir in garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Add orzo pasta and cook according to package directions until tender.
  4. Reduce heat to low and stir in shredded chicken and heavy cream. Simmer for 5 minutes.
  5. Add fresh dill, salt, pepper, and lemon juice. Adjust seasoning to taste.
  6. Serve hot, garnished with extra dill if desired.

Notes

  • For a lighter version, substitute half-and-half or milk for the heavy cream.
  • Fresh dill adds the best flavor, but dried dill can be used in a pinch (use about 1 tablespoon).
  • Leftovers will thicken as the orzo absorbs liquid; add extra broth when reheating.
