Description
A comforting and creamy chicken soup with tender orzo pasta, fresh vegetables, and a burst of fresh dill for a bright, herby finish.

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup uncooked orzo pasta
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 1/4 cup fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a boil. Add orzo pasta and cook according to package directions until tender.
- Reduce heat to low and stir in shredded chicken and heavy cream. Simmer for 5 minutes.
- Add fresh dill, salt, pepper, and lemon juice. Adjust seasoning to taste.
- Serve hot, garnished with extra dill if desired.
Notes
- For a lighter version, substitute half-and-half or milk for the heavy cream.
- Fresh dill adds the best flavor, but dried dill can be used in a pinch (use about 1 tablespoon).
- Leftovers will thicken as the orzo absorbs liquid; add extra broth when reheating.
