Instructions
- Preheat a large soup pot over medium heat.
- Add butter and olive oil. Once melted, stir in chopped onion and cook until soft and fragrant.
- Add minced garlic and sliced mushrooms. Cook until mushrooms release moisture and begin to soften.
- Sprinkle flour over the mushrooms and stir to coat evenly.
- Slowly pour in vegetable broth while stirring. Let the soup simmer for 15 minutes to develop flavors.
- Stir in heavy cream, salt, and black pepper. Simmer gently for 5 more minutes until creamy.
- Ladle into bowls and sprinkle with chopped parsley before serving.
