Ingredients

  • 1 pound fresh mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons all purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat a large soup pot over medium heat.
  2. Add butter and olive oil. Once melted, stir in chopped onion and cook until soft and fragrant.
  3. Add minced garlic and sliced mushrooms. Cook until mushrooms release moisture and begin to soften.
  4. Sprinkle flour over the mushrooms and stir to coat evenly.
  5. Slowly pour in vegetable broth while stirring. Let the soup simmer for 15 minutes to develop flavors.
  6. Stir in heavy cream, salt, and black pepper. Simmer gently for 5 more minutes until creamy.
  7. Ladle into bowls and sprinkle with chopped parsley before serving.
