Instructions
- Preheat your oven to 375°F and line a 12-cup muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk melted butter, eggs, milk, vanilla extract, and orange zest until smooth.
- Gently stir the wet ingredients into the dry mixture until just combined.
- Toss cranberries with a little flour and fold them into the batter.
- Divide the batter evenly into the muffin cups, filling each about 3/4 full.
- Sprinkle the tops with coarse sugar if desired.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Let the batter rest for 10 minutes before baking to achieve taller muffin tops.
