- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 cups rolled oats
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 3/4 cup unsalted butter, cold and cubed
- 2 cups fresh cranberries
- 1/4 cup orange juice
- 1 teaspoon orange zest
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy lifting.
- In a saucepan over medium heat, combine cranberries, granulated sugar, orange juice, orange zest, and cornstarch. Simmer for 8 to 10 minutes until cranberries burst and mixture thickens. Remove from heat and stir in vanilla extract. Let cool.
- In a large bowl, mix flour, oats, brown sugar, and salt. Cut in the cold butter using a pastry cutter or forks until crumbly.
- Press two-thirds of the mixture into the bottom of the prepared pan. Spread the cranberry mixture evenly over it. Sprinkle the remaining crumble on top.
- Bake for 30 to 35 minutes until the top is golden and filling is bubbling.
- Let cool completely in the pan before lifting and slicing into bars.
Notes
- Use parchment paper for easy removal and clean edges.
- Let the cranberry filling cool before assembling.
- Add chopped nuts or cinnamon for extra flavor.
- Store in fridge for firmer bars.
