Description

These cranberry crumble bars are packed with juicy cranberries, sweet citrusy flavor, and a golden oat topping. Perfect for holidays, brunches, or anytime you need a comforting homemade treat.


Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 cups rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 2 cups fresh cranberries
  • 1/4 cup orange juice
  • 1 teaspoon orange zest
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy lifting.
  2. In a saucepan over medium heat, combine cranberries, granulated sugar, orange juice, orange zest, and cornstarch. Simmer for 8 to 10 minutes until cranberries burst and mixture thickens. Remove from heat and stir in vanilla extract. Let cool.
  3. In a large bowl, mix flour, oats, brown sugar, and salt. Cut in the cold butter using a pastry cutter or forks until crumbly.
  4. Press two-thirds of the mixture into the bottom of the prepared pan. Spread the cranberry mixture evenly over it. Sprinkle the remaining crumble on top.
  5. Bake for 30 to 35 minutes until the top is golden and filling is bubbling.
  6. Let cool completely in the pan before lifting and slicing into bars.

Notes

  • Use parchment paper for easy removal and clean edges.
  • Let the cranberry filling cool before assembling.
  • Add chopped nuts or cinnamon for extra flavor.
  • Store in fridge for firmer bars.
