Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 cup green peas
  • 5 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon dried parsley
  • 3/4 cup almond milk
  • 2 tablespoons olive oil (for dough)

Instructions

  1. Heat a large pot over medium heat. Add olive oil, then sauté onion, garlic, carrots, and celery until softened and lightly golden.
  2. Add peas, vegetable broth, thyme, salt, and pepper. Stir and bring to a simmer.
  3. In a mixing bowl, combine flour, baking powder, dried parsley, almond milk, and olive oil. Stir until just combined into a thick dough.
  4. Drop spoonfuls of the dough gently onto the simmering stew.
  5. Cover with a lid and let the dumplings cook for 15 minutes without lifting the lid.
  6. Check that dumplings are cooked through. Adjust seasoning if needed.
  7. Serve hot with fresh parsley if desired.

Notes

  • Do not overmix dumpling dough to keep it soft and fluffy.
  • Keep the lid on during dumpling cooking to trap steam.
  • A splash of lemon juice before serving brightens the flavor.
