- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 1 cup green peas
- 5 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon dried parsley
- 3/4 cup almond milk
- 2 tablespoons olive oil (for dough)
Instructions
- Heat a large pot over medium heat. Add olive oil, then sauté onion, garlic, carrots, and celery until softened and lightly golden.
- Add peas, vegetable broth, thyme, salt, and pepper. Stir and bring to a simmer.
- In a mixing bowl, combine flour, baking powder, dried parsley, almond milk, and olive oil. Stir until just combined into a thick dough.
- Drop spoonfuls of the dough gently onto the simmering stew.
- Cover with a lid and let the dumplings cook for 15 minutes without lifting the lid.
- Check that dumplings are cooked through. Adjust seasoning if needed.
- Serve hot with fresh parsley if desired.
Notes
- Do not overmix dumpling dough to keep it soft and fluffy.
- Keep the lid on during dumpling cooking to trap steam.
- A splash of lemon juice before serving brightens the flavor.
