- 1 bay leaf
- ½ teaspoon dried thyme

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 to 7 minutes until softened.
- Stir in garlic and cook for another minute.
- Pour in chicken broth. Add bay leaf and thyme. Bring to a gentle boil.
- Stir in shredded chicken. Simmer for 15 minutes.
- Add vermicelli noodles. Cook for 3 to 5 minutes until tender.
