Description
A hearty, comforting casserole made with seasoned ground beef, sweet corn, creamy mushroom sauce, melted cheddar cheese, and a crispy potato nugget topping baked until golden and bubbly.
Ingredients
Scale
- 1 pound ground beef
- 1 cup frozen corn kernels
- 1 1/2 cups shredded cheddar cheese
- 1 can (10.5 ounces) cream of mushroom soup
- 1/2 cup milk
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups frozen potato nuggets
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F and lightly grease a medium baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened.
- Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Stir in the frozen corn, garlic powder, salt, and black pepper, then cook for 1 to 2 minutes.
- In a separate bowl, whisk together the cream of mushroom soup and milk until smooth.
- Spread the beef mixture evenly into the prepared baking dish.
- Pour the soup mixture over the beef mixture and stir lightly to combine.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Arrange the frozen potato nuggets in an even layer over the casserole.
- Bake for 35 minutes, or until the topping is golden and crispy and the casserole is bubbling around the edges.
- Let the casserole rest for 5 minutes before serving.
Notes
- For deeper flavor, let the ground beef brown well before adding the other ingredients.
- Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
- You can assemble the casserole ahead of time and refrigerate it before baking.
- Leftovers keep well in the refrigerator for up to 3 days.
