Description

A hearty, comforting casserole made with seasoned ground beef, sweet corn, creamy mushroom sauce, melted cheddar cheese, and a crispy potato nugget topping baked until golden and bubbly.

  • 1 pound ground beef
  • 1 cup frozen corn kernels
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups frozen potato nuggets
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F and lightly grease a medium baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened.
  3. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  4. Stir in the frozen corn, garlic powder, salt, and black pepper, then cook for 1 to 2 minutes.
  5. In a separate bowl, whisk together the cream of mushroom soup and milk until smooth.
  6. Spread the beef mixture evenly into the prepared baking dish.
  7. Pour the soup mixture over the beef mixture and stir lightly to combine.
  8. Sprinkle the shredded cheddar cheese evenly over the top.
  9. Arrange the frozen potato nuggets in an even layer over the casserole.
  10. Bake for 35 minutes, or until the topping is golden and crispy and the casserole is bubbling around the edges.
  11. Let the casserole rest for 5 minutes before serving.
