Description
A whimsical and fluffy cotton candy-flavored cake layered with pastel frosting and topped with real cotton candy. Perfect for birthdays and celebrations.

- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large egg whites
- 1 tsp vanilla extract
- 1 tsp cotton candy flavoring
- 1 cup whole milk
- Pink and blue gel food coloring
- 3 cups buttercream frosting (store-bought or homemade)
- 1 cup cotton candy for decoration
Instructions
- Preheat oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add egg whites one at a time, then vanilla and cotton candy flavoring.
- Alternate adding dry ingredients and milk to the batter, mixing just until combined.
- Divide batter evenly into two bowls. Tint one pink and the other blue with food coloring.
- Spoon batter alternately into the prepared pans and swirl lightly with a knife for a marbled effect.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool completely.
- Frost with buttercream and decorate with cotton candy just before serving.
Notes
- Add cotton candy on top just before serving to prevent it from dissolving.
- You can make the cake a day ahead and frost the next day for best results.
- Try using pastel sprinkles for an extra fun look.
