- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup semisweet chocolate chips
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
- In another bowl, beat eggs, then whisk in buttermilk, vegetable oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Fold in chocolate chips.
- Divide batter evenly among muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
