- 6 cups crumbled cornbread (homemade or store-bought)
- 2 cups cooked and shredded chicken
- 1 cup chopped onion
- 1 cup chopped celery
- 1/2 cup unsalted butter
- 2 large eggs, beaten
- 2 1/2 to 3 cups chicken broth
- 1 tsp poultry seasoning
- 1/2 tsp dried sage
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large skillet, melt butter over medium heat. Add onion and celery, and sauté until soft (about 5–7 minutes). Remove from heat.
- In a large mixing bowl, combine crumbled cornbread, shredded chicken, sautéed vegetables, poultry seasoning, sage, salt, and pepper.
- Stir in beaten eggs and 2 1/2 cups of broth. Mix until well combined. Add more broth as needed to achieve a moist consistency.
- Spread the mixture evenly into the prepared baking dish.
- Bake uncovered for 40–45 minutes, or until the top is golden and the center is set.
- Let rest for 5–10 minutes before serving.
Notes
- Use rotisserie chicken for a quick prep shortcut.
- Can be made a day in advance—refrigerate and reheat before serving.
- Add chopped boiled eggs or cooked sausage for variation.
