Instructions
- Preheat your oven to 425°F (220°C) or air fryer to 375°F (190°C).
- In a small bowl, mix olive oil, smoked paprika, garlic powder, and salt.
- Cut each ear of corn into quarters lengthwise to create rib-like pieces.
- Brush the corn pieces with the seasoned oil mixture thoroughly.
- Place in the oven or air fryer. Roast for 20–25 minutes or air fry for 12–15 minutes until edges are curled and crispy.
- In a bowl, stir together mayo, sriracha, and lime juice. Adjust spice to taste.
- Serve the hot corn ribs with a drizzle or side of spicy mayo and garnish with fresh herbs if desired.
