- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 large eggs, beaten
- 1/4 cup milk
- 1 cup panko breadcrumbs
- 1 cup fine breadcrumbs
- Vegetable oil, for frying
Instructions
- Heat about 1 inch of vegetable oil in a skillet over medium heat until it reaches 350°F.
- In one bowl, mix flour, salt, pepper, garlic powder, and paprika. In another, whisk eggs with milk. In a third, combine panko and fine breadcrumbs.
- Line a plate with paper towels for draining cooked nuggets.
- Coat chicken pieces first in seasoned flour, then egg wash, then breadcrumb mixture, pressing lightly to help coating stick.
- Fry nuggets in batches for 3–4 minutes per side, or until golden brown and cooked through.
- Remove nuggets to the prepared plate and let rest for 1–2 minutes to keep them crispy.
- Serve with your favorite dipping sauces while warm.
